Missing Characters: Excluded, or Disappeared?

Hello, Fanaticals! Today is going to be a short one, as I have a lot of prep for my town's Pride Weekend kickoff this evening. I wanted to look into some theories regarding a couple characters that are either missing or all out disappeared.
While it's not unusual in the show to only have characters around for an episode or two, there is a pair that it's a bit suspicious they weren't around for at least one other episode, nor were they in Storybrooke. What is completely suspicious is the inclusion of one entire storyline that is questionable fairytale or history, but one of the most popular characters is completely missing! Let's take a look that these characters, and the theories of their lack of presence.
Where is Madam Mim?
Arguably, in the story of King Arthur-especially from Disney's Sword and the Stone-Madam Mim is a beloved character, and her battle with Merlin is just the epitome of epic. However, her presence in this show is surprisingly greatly noticed. There have been several theories online that were quite intriguing when I read them as to where, or who, she wound up being.
One theory is that, while Nimue is clearly the original Dark One, there is a theory that she still wound up being one of the (mostly) nameless Dark Ones that followed, perhaps even her immediate successor. Considering how she is as a character, this would not be super far-fetched; but the timeline of events could disprove it.
Do you remember the really creepy woman in the carriage that Rumple was set to stand guard by during the Ogre Wars? Her name was Madam Faustin, and her eyes were sewn into her hands somehow causing her to be able to tell the future. There are some theories floating around out there that she was Madam Mim in disguise, or that she had been caught and punished by the fates for some crime against them which is why she was cursed to see the future and her eyes were in her hands.
If you remember later in the series, there was a specific witch's group: the Coven of Eight. While the witches remained nameless, there is a theory that Madam Mim happened to be one of them.
Of these last two theories, I can honestly see more truth in the second than the first. The first one is that she was the Jabberwocky in Wonderland. I believe this primarily comes from her ability to shape shift. However, she was well-known to shape shift into a dragon which is where the final theory comes from: she is Lily's "father". If you remember, Maleficent spoke of the other parent of her egg, the one that Snow and Charming sacrificed so that their daughter would be pure good who Emma met as a teen, was a dragon. If Mim was a well-known dragon, it wouldn't be far-fetched to believe that she could be the other parent. Considering we don't know how dragon reproduction would truly work, especially in a land of magic.
What Happened to Jiminy's Parents?
Jiminy, aka Dr. Archie Hopper, formulated a plan and made a deal with Rumple to get rid of his parents so that he would be free. In the end, they swindled their own son so that the curse he was going to place on them actually wound up on the parents of none other than Geppetto. However, after the realization and after we see Blue grant his wish to become a cricket, in which she tells him to find Geppetto and be his voice as he grows up.
After this, we never see hide nor hair from Jiminy's parents again. Grant it, when the curse is enacted, Geppetto is MUCH older and when he was a boy, Jiminy's parents were already getting close to their last legs. However, it still begs the question of why did we not see them in the aftermath of him being turned into a cricket?
I have seen several questions about whether they just moved on and didn't care what happened to him, or if they might have tried to look for him. It's very much a back and forth for several reasons. For one, it's highly believable they just moved on and didn't care. They were already treating him like dirt and didn't care about his conscious coming through. They had probably been doing their swindling act for many years before he came around, so it was probably easy to slip back into it, sans their son.
The question of if they looked for him, I believe the only reason they would have, was because they were getting up in age and wanted some last assistance with their swindling. Sadly, it is quite obvious early on that they only see him as an assistant to getting a meal ticket. But them being as old as they already were, I can imagine that is the reason why we do not see them in Storybrooke; however, in the Enchanted Forest, you never know.
